Kadai Bhindi

Kadai dishes have a special appeal when we go to restaurants. I have tried Kadai Vegetables before. I love eating Okra and my son also has developed a love for the vegetable. This is a nice twist and a must taste for Okra lovers

Okra/Ladies Finger/Vendakka/Bhindi 350 gms (about 30 small ones)
Green Pepper 1
Red Pepper 1
Onions 2
Tomato 2
Chilli Powder 1/2 tsp
Garam Masala 1 tsp
Turmeric 1/2 tsp
Cumin/Jeera 1 tsp

Oil and Salt to taste

Method of Preparation

1. Chop the okra into 2-3 pieces depending upon their size. Heat a little oil in a pan. Add the okra. Saute and cook them for a few minutes till it is nearly done. Remove and keep aside.

2. Heat some more oil in the pan. Add cumin and when it sizzles, add the sliced onions. You can also use some ginger and garlic paste at this stage. I was just lazy to add any :-) Saute till onion starts to wilt.

3. Add sliced peppers, chunks of tomatoes and salt. Saute and cook for a few minutes covered till the tomatoes are done and the peppers are cooked (but have a nice crunch to them).

4. Add the chilli powder, turmeric and garam masala. Cook for a minute.

5. Add the cooked okra and mix it all up. Cook for a few more minutes.

Serve with some warm rotis.
