Tiffin Sambar with Pumpkin - Pumpkin Sambar

Sambar is a side dish prepared almost every day in South India. It works as a side dish for rice and vegetables. Another wonderful use of Sambar is as a side dish for Idli and Sambar. Recipe varies slightly when making as a side for Idli/Dosa.

I have a huge variety of sambar dishes in my blog. Each one has its own speciality. Try it all and tell me which one you like best. This one has the awesome flavours imparted from Pumpkin.

Pumpkin (You can also use butternut squash) 2.5 cups chopped (1 small)
Onion 1 finely chopped
Tomato 2
Toor Dal 1/2 cup
Tamarind Paste 1/2 tsp

To Roast and Grind
Channa dal 1 tbsp
Coriander seeds 1 tbsp
Cumin seeds 1 tsp
Red Chilli 2 (more for spicy sambar)

Oil and Salt to taste

Method of Preparation

1. Pressure cook the toor dal and pumpkin with 2-3 cups of water. If you do not have a pressure cooker, cook the toor dal in a pot. When it is half cooked, add the pumpkin and cook together till well cooked and mashed up.

2. In a pan, heat a little oil. Add channa dal and roast till it starts to brown. Add the coriander seeds, cumin seeds and red chillies. Roast for a couple of minutes in low flame.

3. Remove from the oil and powder it. You can also add a little water and make into a paste.

4. In the same pan, add the onions. Saute till it starts to brown.

5. Puree the tomato. Add to the onions. Cook till the water evaporates and the tomatoes are mostly cooked.

6. Add the spice powder and saute. You can add a little water to prevent it from burning. Just add a few tbsp at a time.

7. This will all come together and turn a reddish brown colour. At this stage, add the cooked pumpkin and dal along with tamarind paste and salt. Add more water if needed.

8. Bring to boil and simmer for a few minutes.

Serve with some idli or dosa.

  2. normally I add just a few vegetables in sambhar, but nearly 2 and half cups of pumpkin. Must try this recipe. Looks delicious.
